First opened in 2009, Shizen Ya is a health-oriented Japanese restaurant. It claims to be the first Japanese restaurant chain in North America that serves only natural food. This eatery serves sushi with brown rice, and their salads consist of organic vegetables, organic quinoa, and other fresh ingredients. Shizen Ya also serves a number of vegetarian and vegan options and a selection of gluten-free dishes. Chef Akira Kishimoto and his staff boast classic and creative Japanese food that focuses on using fresh, high-quality ingredients. Wild salmon is used in their dishes, along with carefully selected imported fish from Tokyo, flown in specially for the restaurant. All their sushis, soups, sauces, and desserts are made from scratch, including their famous blend of tamari shoyu.
