The biryani here is called Pot Biryani due to the specially commissioned clay pots that the biryani is cooked in from start to end. Many biryani restaurants in the city cook the dish separately and transfer it into pots upon serving to speed up the cooking time, but Deepak Edla’s Kitchen insists on slow cooking its biryani to infuse it with maximum flavor. The meat is marinated with Deepak Edla’s (the head chef and owner) secret recipe then added to premium long-grain Basmati rice in the clay pots. These cooking vessels are then sealed tightly and cooked over a low flame for more than 45 minutes. This ensures that the meat is fork-tender and the rice perfectly cooked.
