Ulavacharu biryani is a very different tasting biryani that makes use of beans, herbs and vegetables for a hearty, vegetarian meal. Horse gram, which is a lentil-like bean, is the star of this type of biryani. It is an ancient grain and superfood that is slightly chewy and is regarded as a good winter food because consumption of horse gram keeps the body warm. Curry leaves, which are generally not present in Hyderabad-style biryani are also used, lending an unmistakable fragrance to the dish. The tamarind water, which is used in place of yogurt and tomato in traditional biryanis, adds a lovely piquancy.

Deepak Edla’s Kitchen is one of the most hyped biryani in Hyderabad due to the unusual cooking method that this restaurant employs. The biryani here is called Pot Biryani due to the specially commissioned clay pots that the biryani is cooked in from start to end. Many biryani restaurants in the city cook the dish separately and transfer it into pots upon serving to speed up the cooking time, but Deepak Edla’s Kitchen insists on slow cooking its biryani to infuse it with maximum flavor. The meat is marinated with Deepak Edla’s (the head chef and owner) secret recipe then added to premium long-grain Basmati rice in the clay pots. These cooking vessels are then sealed tightly and cooked over a low flame for more than 45 minutes. This ensures that the meat is fork-tender and the rice perfectly cooked.

This is a lighter version of the typically meaty and carb-heavy dish and you will walk away from Al-Saba Restaurant feeling pleasantly full. The succulent mix of vegetables and spicy rice creates a riot of flavors and textures on the palate and also frees your stomach up for the other attraction that people visit Al-Saba Restaurant for. Did we mention that Al-Saba Restaurant is also a tea house specializing in strong Iranian-style milk tea and a traditional Hyderabad snack called Osmania biscuits? I've been to all the above places and though they do sell mouth-watering dishes, if you want to try some old-school authentic biryani, I would suggest visiting Nimrah Cafe And Bakery or Hotel Nayab in Old City, Hyderabad, near Charminar. You'll experience the real Hyderabad here, before urbanization took over! Don't forget to visit Charminar or the local shops close by where you'll get beautiful lehengas (Indian style full-length skirts) for rock-bottom prices.
