La'au’s Taco Shop, located just right next to Colorado College, blends Hawaiian cuisine with Latin American influences. They serve fresh, healthy food, and everything is homemade, down to the tortillas! La'au’s is also committed to protecting the environment, and a small part of their profit goes to environment-related charities. Some of their food is a “build-your-own” type of system, but they also serve some interesting signature tacos.
