What is Peking Duck?

Peking Duck is perhaps the most famous dish in Beijing and is considered one of China’s national dishes. Peking Duck consists of thinly sliced pieces of tender, roasted duck meat and crispy skin. The dish is said to have been on the menu for Chinese nobility as far back as the Yuan Dynasty. Since it has been around for centuries, the Peking Duck may be considered a perfected art in many Chinese kitchens.

The best way to eat Pecking Duck

When you order Peking Duck, the chef usually brings the duck out to the dining room and carves it in front of you. Before the duck is carved, air is pumped under the skin so that the skin detaches from the meat. The way they serve the duck is an art by itself, separating the skin from the white flesh.

The best way to eat Pecking Duck is by wrapping it in a thin crepe with hoisin sauce, a combination of vinegar, garlic, chilies, and fermented soybean paste, among other ingredients. A selection of veggies, such as cucumbers, spring onions, carrots, and bitter gourd, may be included on the side.
