The Prohibition Era was a time in American history from 1920-1933 when alcohol was banned across the country. Often referred to as ‘the Noble Experiment’ because of its ultimate failure as a law, this time of secret knocks, whispered passwords and hidden bars still holds a certain charm for cocktail enthusiasts today. Speakeasy-style bars that evoke the mysterious allure of this famous time in history have become popular across major US cities.

One of the most highly rated speakeasies both for cocktail quality and an authentic Prohibition-era feel in San Diego, California is aptly named The Noble Experiment, located in downtown San Diego’s famous Gaslamp District. Located behind a secret door that appears to be a stack of old beer kegs within the upbeat, casual restaurant Neighborhood Alehouse, and accepting of only very specific reservation methods, this unusual bar is the Gaslamp District’s best-kept secret.

The unusual, eccentric decor and intimate venue will transport you back in time

The dark, candlelit atmosphere and the sound of hushed conversations in this hidden bar will immediately transport you to another era. This intimate venue is designed to accommodate only 35 people; the arrangement of the bar seats and the few close, low cocktail tables create a naturally intimate atmosphere that makes you feel as if you’re in cahoots with your neighbors as you enjoy your “illegal” beverages together. The compact space is decorated in an eccentric Gothic style, complete with an antique chandelier, ornate framed paintings positioned on the ceiling, framed screens with ‘paintings’ that blink at you, and a wall completely formed out of over 2,000 brass skulls.

Attire is smart; men will not be allowed in with caps, sandals or shorts, and collared shirts are preferred. Women should embrace the theme as well and arrive in their classy best. Because of the limited seating capacity, reservations are a must. Reservations are recommended to be made one week in advance for Friday and Saturday nights, and one day ahead for weeknights. The reservation style follows the enigmatic feel of the bar. Noble Experiment’s website features nothing more than a picture of a key and a phone number; guests must text this number at precisely one minute after midnight to obtain a reservation. Walk-ins are sometimes accommodated, but reservations are strongly recommended, especially for groups larger than two.

Noble Experiment is arguably the most popular and authentic bar of its type in San Diego, though there are few. This secret den is more than just its theme; however, you don’t have to be a history buff to appreciate the work of the skilled mixologists who tend the bar. Their physical menu is sparse, but each offering is expertly crafted, and includes top-shelf liquor, handcrafted slow-melting ice blocks, fresh garnishes, and house-made bitters, brine, and other cocktail additions. For the adventurous types who really want to see what these mixologists can do, go for the ‘Dealer’s Choice’: you pick the liquor and they decide the rest! Noble Experiment also offers a limited wine selection, but cocktails with astonishing depths of flavor are their real specialty. These works of art run about 15 USD, but these are no sloppily-poured drinks from a soda gun: each one is a handcrafted masterpiece. Because of the resident mixology expertise, no food is served at Noble Experiment; however, the Neighborhood, which houses the speakeasy, offers a wide range of trendy bar food before or after your sojourn to the 1920s.

The overall atmosphere of Noble Experiment, including the unusual reservation method, the hidden door and the fairly strict dress code, all contribute to the thrill of the speakeasy vibe. However, this 1920s-style cocktail lounge does not fall into the category of establishments that are so focused on their theme that their product suffers: come for the unique theme, stay for the spectacular drinks. The excitement the speakeasy-atmosphere brings is just a bonus at a place where the cocktails are the real hidden gem, just like in a real 1920s speakeasy.
