It is said that once Swamy is satisfied with a certain amount of Theertham (from each devotee), he'll signal so, and the Pandit will hear a 'clicking sound.' That is when they stop offering the Theertham and provide the remaining to the devotees, who believe that consuming the same will drive away bad troubles.
