Chef Rafael Gonzalez takes Italian classic recipes and integrates locally sourced ingredients to come up with his own version of traditional dishes. Quattro is known for its lasagna which is based on fresh pasta, akaushi beef, and a double take of cheese, ricotta and a thin mornay sauce. Akaushi beef is one of the top four wagyu types. A local purveyor supplies the hotel with this beef. This makes it the best personification of the dishes the chef creates for Quattro.
