Snow crabs which are landed in Ishikawa Prefecture are branded as Kanogani, but even amongst them those that are landed in Kaga’s Hashidate Port are of highest rank.

The reason for that is because the fishing grounds are not far from port. The fishermen leave early before dawn and come back within that day and auction off their catch, so they are as fresh as can be.

Crab branded as Kanogani are marked with a blue tag, while those from Hashidate Port are marked with a black tag with gold lettering. They are available between November and March.

During that period the inns in Kaga Onsen, which are close to Hashidate Port all have packages that include Hashidate Crab in their meals.

If you grill the shell of the crab with the innards inside you can taste the creamy umami of the ocean filling your mouth. The aroma is undeniably good at raising your appetite.

You can dip the crab sashimi in this buttery concoction or you can order some sake and partake in shell sake.

Onsen hopping at the old yet new Soyu is recommended!

Yamashiro Onsen has a 1300 year history. Try the open air baths while exploring the town.

The town in Yamashiro Onsen was built around a communal bath called Soyu, with shops and inns surrounding it, and is called Yunogawa.

In recent years there are two visitor baths called Soyu and Kosoyu which recreate the original architecture.

The interior of Soyu is made up of Kutaniyaki Tile and Hinoki Cyprus. The Kutaniyaki Tile are all hand decorated by local Kutaniyaki craftsmen. The ceiling is opened up so you can bathe under the blue sky or under the stars in two different types of onsen with 2 different temperatures.

Kosoyu was built to recreate the Soyu of the Meiji Period. The exterior, interior floor, walls, Kutaniyaki Tile, and the stained glass windows are all recreated to be period correct. The water here is 100% straight from the source and the bathing style is from the Meiji Period as well with no showers or faucets, allowing you to get a taste for how people back in the day used to bathe.

Next to Soyu is the Hazuchiwogakudo built in Bengara-koshi style where you can eat locally produced snacks and enjoy a gallery. It is a great place to rest after a bath.

Visit the land famous for Kitaooji Rosanjin visiting

To know Yamashiro Onsen you can’t forget the cultural icon of the Showa Period Kitaooji Rosanjin.

Rosanjin wore many hats, an author, food critic, a potter and even a chef. Yamashiro Onsen was important for him to develop all these skills.

While living in an annex of an inn he learned from the Kutaniyaki master craftsman Suda Seika about carving signs, developing a palate, and the craft of ceramics.

Currently this annex is open to the public as the Rosanjin Gukyoato Irohasouan.

Also, there are 6 shops in the onsen town that sell Kutaniyaki wares, starting with Kutaniyaki Kamamoto Suda Seika. From everyday items to art pieces you can buy mementos of your trip here.

The allure of Yamashiro Onsen is that you can enjoy a bath, great cuisine, learn about history and culture all at once.
