Welsh Rarebit is savory melted cheese sauce over slices of toasted bread. It is rather easy to prepare: put the cheese, butter, Worcestershire sauce, mustard, flour and pepper into a saucepan and mix well. Then add an option of beer, Guiness or milk to moisten. Finally, stir over a gentle heat until all is melted, and when it is a thick paste, swivel it around the saucepan, which will produce a soft cheese texture of ingredients and flavors.

Laverbread is a Welsh dish of laver that is boiled, dipped in oatmeal and fried. The recipe is simple to prepare: wash the seaweed and rinse in clean water. Then, over a low heat, simmer the seaweed for 6 hours until it turns into a dark pulp. Combine the Laverbread, olive oil, lemon juice and seasoning and stir through. Toast the bread and then butter to taste. With the added seaweed, it gives the Laverbread the extra zing and kick for a scrumptious meal. This Welsh seaweed delicacy is touted to be on par with champagne prestige.

Bara Brith, also known as “speckled bread” can be either a yeast bread enriched with dried fruit or made with self-raising flour without yeast. It is a Welsh tea bread made with dried fruits like raisins, currants and candied orange peel. It tastes a bit like fruit cake, except less sweet and without eggs. It comes with spices, and is served sliced and buttered for tea time. However, with a variety of palates, it has morphed into several variations, including a chocolate cake!

6. Welsh Cakes - Flat-bread baked on a griddle

Welsh Cakes are basically flat-breads baked on a griddle. Preparation is easy peasy and no fuss! For the Welsh Cakes, you will need self-raising flour, plus extra for dusting. Then add caster sugar, with extra to serve. Thereafter, add mixed spice with cold, unsalted butter, a pinch of sea salt, mixed raisins and sultanas and finally 1 large egg. Mix the ingredients with your hand into a smooth dough and roll it and use a pastry cutter to cut out as many rounds as you can and fry on medium heat.

For the sweet filling, you can add double cream, caster sugar, with extra for sprinkling, vanilla bean paste and fresh berries, such as raspberries, strawberries, blackberries and lemon.

Begin by frying the onions and bacon in a large frying pan. Add the beef stock to the pan and simmer until the potatoes slices are just tender. Cook for 20 minutes, stirring and mixing the bacon and onion mixture through the potatoes until soft and tender.

Tatws Popty uses cubed vegetables that are baked in an oven. For the recipe, in case you would like to prepare it yourself, here it is: Place a layer of quartered potatoes in a roasting dish, top with a layer of sliced onion and season with salt and pepper. Add sufficient water to cover the potatoes and place the joint of meat on top. Roast on a moderate heat in an oven for about 2 hours, until all the water is absorbed and the potatoes are nice and brown. It is a sumptuous delicacy by itself.
